Approximately 80% is polyunsaturated fat - the highest of any vegetable oil. Specifically, it contains the essential fatty acids (EFA's), linoleic acid (Omega-6) and alpha linolenic acid (Omega-3). EFA's cannot be synthesized by the body, both human, and animal, therefore it must be obtained from our diets.
